Hummus

I love a tahini heavy hummus. This is just that. Feel free to double the recipe..this won't last long!

INGREDIENTS


  • 1 398ml/15oz can of chickpeas - drained and rinsed

  • 1 large lemon - juice and pulp

  • 1 large garlic clove

  • ½ cup tahini

  • 2 tbsp olive oil + more for drizzling

  • ½ tsp salt + more to taste

  • Sumac, chopped parsley and tahini to garnish (optional)


DIRECTIONS


In a high power blender or food processor combine lemon juice & pulp, tahini, garlic, salt and ¼ cup of ice water. Blend until creamy. Add in chickpeas and blend again, streaming in olive oil until smooth and very light and creamy. Add more water as needed and salt to taste, if needed.


Transfer hummus to shallow bowl and garnish with more olive oil and sumac, parsley and tahini, if using.
