No-Bake Chewy Fig & Pistachio Granola Bars
I love a good chewy granola bar. Pistachios, figs, and chocolate is such a good combo especially with flaky salt on top. I’d like to think of these as a “grown up” granola bar but, I am sure little ones will be fans of these as well.
1 cup of dried figs 12-14
2 cups rolled oats
¼ cup honey (maple syrup if vegan)
1tsp vanilla extract
1tbsp coconut or olive oil
½ cup cashew or almond butter
2tbsp each of flax, chia, hemp seeds
½ cup finely chopped pistachios (save some to garnish the top)
½ tsp each sea salt
½ tsp cardamom or cinnamon
¼ cup cacao nibs (optional)
1 100g dark chocolate bar or ½ cup dark chocolate chips - melted
Flaky sea salt to garnish
In a blender, or food processor blitz figs a few times until they resemble little bits and begin to form a “ball”. Set aside.
In a large bowl combine oats, flax, chia, hemp, salt, cinnamon, cacao nibs (if using) and mostly all your pistachios (I save a couple of tbsp to garnish the top of the bars, but it’s not necessary).
In a small sauce pan over medium low heat add cashew butter/or almond, oil, honey, vanilla, and sea salt and stir until melted and combined. Add figs and stir once more. Combine these wet ingredients with your oat mixture and mix until it's all incorporated and sticking together. Line a rectangle or square dish of choice with parchment paper. (I used a square 8x8 but use whatever you have that will make a decent size granola bar shape when you go to cut them) Press firmly into the pan so it is all compact and in one even layer. Pour melted chocolate on top and evenly spread. Sprinkle with pistachios and flaky sea salt.
Refrigerate 1 hour before cutting into bars.
Store in the fridge for up to 1 week
No figs? Use dates. No pistachios? Hazelnuts, walnuts or almonds will still work too!
Bars can also be frozen and taken out for a quick snack
